Black Bean Salad

Beans Beans Beans! Beans are the one of the world’s healthiest foods. Not only they provide special support for digestive tract health, but also help maintain healthy bones, weight loss, lower blood pressure and prevent cancer as they contain iron, phosphorous, calcium, magnesium, manganese, copper and zinc.

  • Ingredients: 6 Servings

    2 cups black bean
    1 cup red kidney bean
    1 small red onion
    1 cup sweet corn
    2 large red apples
    ¼ cup olive oil
    1 squeezed lemon
    ½ tsp salt
    1 cup dry quinoa

  • Preparation:

    In a large pot, bring 8 cups water to boil then add quinoa. Boil for 2 minutes then remove from heat and simmer for 10 minutes or until quinoa tripled in size and tender. Remove Excess water and place a side to cool. Combine all other ingredients and mix until well combined. Add cooked quinoa and mix well with bean mixture and serve.


Beans are magical! They are delicious and have many health-giving properties.
