Fresh, healthy tabouleh! Tabouleh is a very authentic Arabian vegetarian dish/salad. One of the most famous dishes in the Middle East that contains very simple ingredients such as parsley, bulgur wheat, olive oil and seasoning. The main ingredient is parsley! Parsley is incredibly healthy as it contains vitamin K, C and A.
3 bunches fresh curly parsley finely chopped (Tip: Curley parsley stays fresher and crisper longer)
2 large tomatoes finely sliced cubes
1 large onion finely chipped
5 tablespoons of extra virgin olive oil
½ fresh lemon juice
1 teaspoon salt
½ cup fine burghul (bulgur/cracked wheat) washed and drained
The most important step is to properly wash the parsley from dirt or sand between leaves. Once washed, finely chop then drop in a large bowl. Add all ingredients and toss until well combined. Season to taste. Let it sit for 1 hour or until bulgur has soaked the juices and becomes tender. If time is of the essence, soak bulgur with boiling water for 2 minutes prior to adding it to the mixture then wash with cold water. Drain and squeeze excess water and add to the mixture.
Best served with fresh lettuce used as a wrap.
